By SKU or by barcode. Nothing syncs until a match exists, so a product only present on one store is left alone.

Can a sync delete products on my other store?

Not unless you turn that on. Deletes do not propagate by default, and pausing or removing a link changes nothing on either store.

What happens if two stores disagree?

You get a drift alert once they have disagreed for more than 30 minutes, rather than one store silently overwriting the other.

Can I see what a sync will do before it writes?

Yes. Every push previews first, and any run can be undone.
